French Breakfast Puffs Ingredients:
3 c. Flour
3 tsp. baking powder
1 tsp. Salt
1/2 tsp. ground nutmeg
1 c. sugar
2/3 c. shortening (Crisco)
2 whole eggs
1 c. Milk
1 1/2 c. sugar
3 tsp. Cinnamon
2 sticks butter
French Breakfast Puffs Preparation Direction:
Preheat oven to 350 degrees. Grease 12 muffin cups lightly.
In a large bowl, whisk together the flour, baking powder, salt and nutmeg.
In a separate bowl, cream together 1 cup sugar and shortening. Then add eggs and mix again. Add flour mixture and milk alternately to creamed mixture, beating well after each addition.
Prepared muffin cups are 2/3 full. Bake at 350 degrees for 20-25 minutes or until golden.
Melt 2 sticks of butter in a bowl. Combine the remaining sugar and cinnamon in a separate bowl. Dip cooked muffins in butter, coat well, then coat with cinnamon-sugar mixture.
The deliciousness of these beauties should not be underestimated. After cooling completely, the puffs can be stored in plastic bags and reheated later.
