One of the finest and most delicious French breakfast items is ‘Croque Madame’. Literary it means “Mr Crunch,” Croque Monsieur is a treasure trove of textures. Put a fried egg on top of your sandwich to turn it into a Croque Madame. This sandwich stars layers of thinly sliced ham, soft, melted cheese, and an audible crunch when you bite into the toasted bread. Hidden in plain sight is a traditional Morne sauce: a Béchamel sauce upgraded with melted Gruyere. If you’re not a fan of the pungent flavours of Gruyere, feel free to opt for a mild comte.
This sandwich is a lot to handle, so choose a nice, sturdy thick slice of bread to hold everything together!

Croque Madame Ingredients:
1 tbsp. butter
1 tbsp. all-purpose flour
2/3 c. whole milk
1/4 tsp. Pinch kosher salt
1/4 tsp. Freshly ground black pepper
1/4 c. shredded Gruyère
For Croque Monsieur
4 slices thick brioche or country bread
2 tbsp. butter softened
2 tsp. whole-grain Dijon mustard
1/2 c. Mornay sauce
6 thin slices ham
1 c. shredded Gruyère, divided
For the Eggs
1 tbsp. butter
2 large eggs
Maldon, for sprinkling
Freshly ground black pepper
Croque Madame Preparation Guidelines
Preheat the oven to 350°. Make Morne Sauce: Melt butter in a small saucepan over medium heat. Add flour and mix until fragrant, 1 minute. Slowly whisk in milk and add salt, pepper and nutmeg. Bring to a boil, stirring constantly, and cook for 2 minutes, until sauce thickens. Remove from heat and mix in Gruyere. Let cool for 10 minutes.
Assemble the Croque Monsieur: In a large ovenproof skillet over medium heat, toast the bread until lightly golden on both sides. Spread Tbsp butter on each slice, then flip over two slices and spread 1 Tbsp mustard and 1 Tbsp Mornay sauce on each. Place 3 slices ham, cup Gruyere, and remaining bread slices on top of each mustard slice. Spread the top of each sandwich evenly with 2 tablespoons sauce, and sprinkle with the remaining Gruyere.
Transfer skillet to oven and cook until cheese is melted and the top is golden 15 to 18 minutes.
In a nonstick skillet over medium-high heat, melt butter. Crack the egg into the skillet and fry for 3 minutes until the whites turn white. Season with salt and pepper and top each sandwich with an egg. 0 0 0.
